Wine making:
 The grapes are all coming from the vineyard "Balifico", harvested by hand and collected in small boxes holding 33 lb. Under constantly controlled temperatures the grapes macerated in ideal conditions. The grapes first fermented in their own yeast at temperatures between 80 and 86°F. During these fourteen days, they were automatically punched down twice a day to draw out their finest qualities. After macerating on their skins for a further 8 days, the malolactic fermentation started. At the end of winter 1999 the wine was moved to Allier oak barriques where it will be left to age for about 18 months.
Tasting notes:
 colour: Vivid ruby red with a dark purple tinge
nose: Fine and elegant, scent of blackberry and blueberry combined with a trace of cinnamon and boisée
taste: smooth, round with a good structure. Very persisting aftertaste of red fruits
