Honey

It's not by mere chance that the production of wine and honey are so often closely associated. Even in mythological times honey and ambrosia were the food of the gods as, of course, was wine.
At Volpaia our bees produce not only millefiore, the honey collected from all the wild flowers in the surroundings, but also three honeys from a single flower. They are Heather, Acacia and Chestnut The hives are strategically placed because bees, being very methodical and never travelling more than one and a half to two kilometres in search of food, feed off the nearest nectar. However, their production depends on the weather and some years there are not sufficient blossoms on all the trees.

  • Heather

    In upper Chianti these purple and blue bushes are very prolific. The honey produced from them has a high glucose content and crystallizes very quickly. The honey combs are collected in April and May.

  • Acacia

    Acacia blossom is shiny yellow or white and its strong scent is very appealing to bees. Because of its high fructose content, the honey remains runny for a long time. The combs are collected in May.

  • Chestnut

    This honey is amber coloured with a pungent scent and an interesting slightly bitter aftertaste. It crystallizes irregularly and is collected in June.

  • Millefiore

    Collected from the hives placed in the fieids and woods surrounding Volpaia, it is harvested any time from April to September.
