VINSANTO

The healthiest and most beautiful bunchers of Malvasia and Trebbiano were harvested in October. They were then hung up to dry on rafters in our Vinsantaia, a huge attic where the grapes are dried and the vinsanto stored, so it is effected by all the changes in temperature. [more...]

BIANCO DI VOLPAIA

BORGIANNI

Chianti Borgianni is made from a selection of the best grapes produced on the hills of the Chianti Senese area. Once the grapes were destalked and crushed they were left to ferment in stainless steel vats for about 10 days at temperatures between 80 and 86°F.
