| | Dungeons and Trebbianos F ifty-two people, four churches, no priests. And the niftiest winery you've ever seen. Welcome to Volpaia. Nifty? OK, medieval nifty, as in a winery that's cleverly built into, around, among, and through a tiny Tuscan hill town (a hamlet, really) that dates from the 11th century. It's spitting distance to Radda in Chianti, 25 miles from Siena and 35 from Florence, and its historic purpose was to fend off attacks from the Florentines. Its purpose today is to demonstrate how much better it is than where you live.
Castello di Volpaia harvests Sangiovese, Cabernet, Sauvignon Blanc, Merlot, Syrah and Chardonnay (this is not your grandfather's Chianti) from vineyards surrounding Volpaia, vinifies them in buildings hundreds of years old around the Piazza 23 Novembre, and ages them in labyrinthine cellars underneath a couple of those priestless churches - which is also the Lord's work. For you authenticity fans, you can finally climb up the steep stairs to a vin santaia, an attic where Trebbiano and Malvasia grapes hang on long chains from the rafters, like hams, drying out for months at a time before being turned into the most sacred sweet wine, vin santo.
And then you can go make lunch. The other nifty part about the winery (and olive oil producer) is that it's also a cooking school run by owner Giovannella ("call me Jo" ) Stianti Mascheroni. It's a very small cooking school, and yes, you can sign on for just one meal. I didn't enroll for class, but I did stay to eat Jo's Pasta Norma and her veal braised in milk and carrots. And drank her bright Chianti Classico, a food-affectionate, acid-rich sweetheart. For dessert, I nominated her for sainthood. di Terry Sullivan

Under our Tuscan sun "... On our last full day in Tuscany we venture out to discover Volpaia, a tiny hamlet up in the hills behind Radda. After thinking we've taken the wrong turn we end up on the correct route -- yet another narrow, winding road to the village. Volpaia is like most towns in Tuscany, you will see your destination long before you reach it. Most towns are perched high on hills. This was done in order to protect them from rival neighbouring towns centuries ago.
Volpaia proves to be a most interesting stop. We enjoy a cappuccino in the small town square before venturing out to walk the narrow cobblestone streets. We pick up some locally made wine and vinegars before stopping for lunch at one of the two restaurants. Our view is again spectacular and the food equally good.
Most restaurants offer indoor and outdoor dining and we choose outdoor as often as we can. The food in Tuscany is everything I thought it would be. Every restaurant offers a wide selection of fresh pasta plus different meats. Pork, wild boar and rabbit appear quite often on the menus, roasted or in stews. The wine menus are extensive, highlighting the Classico Chianti, for which the region is famous. We take every opportunity to sample the local favourites either on our plates or in our glasses. ..."

| | A slow travellers' guide to Italy "Most guests arrive in a state of shock, admit Guido and Martina. The postal address suggests this place is on the Tuscan tourist trail; the reality is glorious isolation. But the Bevilacquas' skills as hosts soothe the most ruffled feathers, and the astonishing panorama of Chianti and the medieval village of Volpaia does the rest. "We give guests an 'unplugged' experience without letting them feel abandoned," says Martina. "We look after them, make them drinks, cook for them, help them make plans. We know when to leave people alone and when to join in."
Guido and Martina found the old farm 12 years ago after it had been abandoned for 40 years. "It was a classic story: farmhouse left to rot, trees growing inside, land overgrown," says Martina.
The couple are supporters of the Slow Food Movement. Says Guido: "We are surrounded by 300 hectares of some of the best organic vineyards, olive groves and honey. We take a lot of care choosing our suppliers and, thank God, here it is still possible to find small artisan producers."
Martina, who does most of the cooking, prepares what is seasonal and good. "I prepare only one thing each night, just as you would at home. Sometimes we eat beautifully but simply; sometimes dinner is elaborate. I imagined when we moved here that we would find a local lady from the village to cook for us. She never materialised and now I do it all and I love it."
They are a dynamic pair, full of vigour and life, and they have created a memorable place to stay. The beautiful pool vies for attention with the heart- stopping view, there are a library/bar, fine antiques, lovely art, whitewashed rafters soaring over pretty beds and terraces upon which Guido alights with glasses of wine, maybe a grappa, or a restorative coffee. They are vigilant guardians of the landscape and of local traditions. They richly deserve all the good company that is lured to La Locanda.

100% Sangiovese While needing a bit of time to get going this has classic notes of tobacco, leather and limestone on the nose. There is a nuance of vanilla and lovely grace notes of smoke and slightly herbaceous/herbal sod. This offers up a wonderfully feminine and firmly mid-bodied feel with fine acidity and rich flavors of leather, red currants, a touch of rust, and limestone with nice richness on the back end and solid length. Extroverted but contained nose of whole plum, hickory, and dried cherries enveloped the nose but the palate is unmercifully attacked by velvety tannins and mature but not under ripe red fruit that is relentless in its pursuit of the sweet spot of your palate. This is serious chianti classico; as good as it gets, and should serve as an example of what the region is capable of producing with its own local varietals. | | Balifico '97 1997 Volpaia, Balifico: Medium-dark ruby/purple, with good tint to the tears. Spicy nose of blackberries and cherries -- later (ca. 2hrs. in and open bottle) added a rosey floral element. Moderately full-bodied, well-balanced flavors of focused black cherry, black currant, and a very mild peppery, spicy finish with relatively firm tannins. Still evolving, not at its peak yet, but certainly enjoyable now. More than held its own with a Black Angus Tenderloin steak (Baci Trattoria in SLC). WS gave this wine a 94, which to me means just a step off classic quality. It did not seem quite that close to a classic super Tuscan to me. My score: 92. Will wait a year for another taste of this vintage.

| | Balifico Magnifico Have you ever gone to a restaurant and wondered how you would find that knockout wine you just had with dinner but had never heard of? You go to your local wine shop, and they don’t even have the label, much less, the wine you’re looking for. Well, during our gallivanting through the Newport Mansions Wine and Food Festival (ok, not quite a restaurant) Gary was invited into the booth of the Wilson Daniels wine distributors, where he was introduced to a number of wonderful, unknown (to him) wines. When we wrote our
review of the Festival, we discussed the Coltasalla from Fattoria Castello di Volpaia (Sangioveto and Mammolo grapes) and raved about the quality and non-stop finish on this outstanding Tuscan red.

One-third Cabernet Sauvignon, two thirds Sangiovese di Volpaia, a clone from the property. This offers up the classic scents of these Sangiovese/Cab blends yet even at this relatively high percentage of Cabernet it does not dominate the nose. There are balanced notes of leathery fruit and cool, crisp Cabernet notes with a gentle edge of tomato leaf. Gaining a bit more depth with air the lightly smoky, spicy chili notes of Cabernet become more assertive yet in the mouth the feel is that of the austere and sapid Sangiovese but with the deep black currant fruit of Cabernet augmenting the cherry tones read more...of the Sangiovese well. This retains juicy acids and has good length in a rounder and fruitier style than the other wines. Definitely a crowd-pleaser and while perhaps as complex as the other Castello di Volpaia wines this is a bit on the smooth and polished side.

Produced from 95% Sangiovese and 5% mammolo. In contrast to the open and giving 2004 CCR this bottle opens very slowly with intriguing notes of vanilla tinged jammy blackberry fruit that is framed with gentle toast notes and a very fine mineral vein that grows in intensity. After about an hour this really blossoms with fine perfumed scents of violets, hot beach sand, hot iron, subtle cinnamon and a light top note of fine cigar smoke. In the mouth this will appeal to those who prefer balance and precision over power and weight. Opening with great cut, this it tight and almost tough with emerging notes read more...of oyster shell and very small red currant fruit but the balance and definition are wonderful and the sapidity and austerity of the wine keep one coming back again and again. With time the wine fills out a touch and gains a sneaky length as the tight core of fruit turns towards blackberry and ends with a subtle mint tinged hard candy note.

| | A few from Castello di Volpaia I had dinner last night with young Nicolo Mascheroni Stianti; currently working the US markets trying to get the word out about his families wines. We shared bottles of Castello di Volpaia wines and they all gave very solid showings running the gamut from classic to modern but each speaking with a clear voice, relaying it’s Tuscan origins!
The Stianti family owns the majority of the 12th century village from which the winery takes it’s name. Volpaia is a preserved hilltop town harkening back to more peaceful times. An unusual fact about the label of the Castello di Volpaia is that the crest on the label, a drawing of a fox climbing a hill, refers not to some regal family association but rather to the simple origin of the village’s name. Volpaia refers to a fox’s lair and rests on the crest of a small hill,: the inspiration for the simple crest!
Behind the restored facades of these medieval homes and deconsecrated churches lies a complex warren-like wine cellar and olive press all interconnected via a network of stainless steel pipes. The village itself has been converted into the winery and thus it is easy to pass through town thinking one has missed the winery. As cagy, and respectful of the land as that may be don’t be fooled into thinking that the village itself isn’t still a vibrant community It is in fact a growing rural, agricultural community, home to some 50 plus people who form the core of the staff of Castello di Volpaia. This village of people tends to every aspect of the winemaking process, which includes the organic farming of all the vineyards and olive groves, to the manual harvest, and even the production of honey and vinegar.
The wines are made with a combination of modern and traditional techniques; the reds under-go a cold soak to extract the maximum pigment and polyphenols from the skins but undergo a fermentation with natural yeast, for example. In an effort to retain the genetic diversity of the vineyards and avoid reliance on only one or two clones of the vine, the Stianti family cultivate a plot of library vines from which stock is taken to replant the vineyards as needed. There is even a small plot of pre-phyloxera vines here, which have survived due to the sandy soil and high elevation of the vines.
Barrel ageing is undertaken in a blend of large French and Slavonian wood and French barriques, the overwhelming majority of which are neutral. The style of the Volpaia wines is really dictated by the slopes that are home to the vines. Sitting at elevations of approximately 1500 feet above see level, and in the cool Radda zone of Chianti, the grapes here have to struggle to fully ripen and the wines will never have the power and richness of those from warmer climes. What they do have however is balance, transparency, fine acidity and the minerality of their limestone rich soils.
Sangiovese and many Tuscan wines based on Sangiovese are a tricky subject. They are inherently wines for food and they rely on their ability to work with food and their gentle and slightly rustic grace to distinguish themselves. Many examples have been produced over the past two decades where this grace is replaced with incongruous power and blends have come to market where foreign grapes mask the delicacy of the indigenous Sangiovese. It is a delicate balance, but the Stianti family, who have owned Volpaia for over 150 years, are cognizant of the limits one can expect from this fine terroir and have chosen to walk the path of tradition and allow the wines to express only what the grapes can offer, nothing more but nothing less. It is true that these wines may exhibit a bit of obvious wood in their youth but this tends to be quickly absorbed and does not interfere with the fine aromatic expression these wines are capable of.

Nicolo was born in Florence and went to high school and college in Boston. He returned to Italy to earn his degree from Bocconi University in Milan in 1998. After working for some of the top companies in Italy he came back to the family business at Volpaia. In time Nicolo will assume leadership of Volpaio.
We will be tasting 6 wines and I will prepare a 4-course Tuscan sytle dinner.

Coltassala Chianti Classico Riserva 2001
Giovannella Stianti e il marito Carlo Mascheroni, dopo aver conquistato per la prima volta i Tre bicchieri lo scorso anno con il Balifico, si sono ripetuti quest'anno, con una splendida versione della Riserva Coltassala 2001. Il lavoro impostato insieme all'enologo consulente Riccardo Cotarella ha dato buoni frutti, testimoniati da un ottimo risultato d'insieme. Il vino premiato si presenta di un colre vivissimo, con note olfattive che ricordano il frutto di bosco concentrato, cenni speziati di vaniglia e sentori balsamici. In bocca l'ingresso è invitante con un corpo che si dimostra avvolgente, ben assestato, con una buona distribuzione tannica e una lunga persistenza gustativa. di Gambero Rosso Allegati:

Guide 2001. Out of 70 wineries of the year, Castello di Volpaia was
one of eight Italian wineries, and one of two Tuscans. “Out of the five
wines Castello di Volpaia exports, this year we recommended four--the
kind of record Ted Williams might envy. Our two favorites both hew to
the dried cherry and woodsy character of traditional Tuscan
